About this deal

i actually like brown rice, so i could imagine enjoying this :D coincidentally, i went meatless today (but it was just a coincidence). Stir until it’s all coated with flour, then add just enough very cold water (three or four tablespoons should do it) to bring the mix together into a smooth dough.

I also loved the flavours of the vegetables in there – I think a risotto needs big chunks of veg to provide other flavours and textures. With an international twist, vegetable tagines and moussakas mingle with British stalwarts such as sausage rolls and mulligatawny. Breakfast is simple - cereals, porridge, berries, yoghurts , non dairy if they are dairy free but worth a try for anyone , almond or oat milk , toast etc. Cooked was just without bacon/sausage - so mushrooms, tomato, hash browns, eggs in whatever style and baked beans.

Starting from the filling side, roll up the pastry as tightly as possible around the filling, then place it seam side down on the work surface and cut into 3cm-wide pieces. When we had a veggie friend coming for dinner I just winged it and made up a version of a savoury plait. A little on the heavy side, but perhaps that is my fault as I think the cobbler mixture would have worked better if I'd spread it out a little more over the fruit.

Divide into two portions and roll each out into an oblong shape as long as the sausages you’ve just rolled out and deep enough to wrap around the sausages with a small overlap. Use scissors or the tip of a knife to snip a small hole in the top with scissors, then sprinkle with seeds, if using. This one was easy to make and have made extra to freeze in portions of sauce so I can cook vegetables in it for a ready meal. I've used this book a lot over the years, there are some favourites that I keep going back to, and have just reread and found some more that are very good and will go back to/become regular dishes I cook.

It is best to add the water slowly until you have the right consistency – if you pour in too much water the dough will be too sticky to roll out. Delia Smith has tossed the odd crumb to non-meat eaters in previous books: in Delia's Vegetarian Collection, finger on the pulse as always, she pulls the best of those together, tops them up with a selection of new ones, and presumably has herself and the BBC another bestseller.Cut this oblong into three strips and divide the filling also into three, making three long rolls the same length as the strips of pastry (if it's sticky, sprinkle on some flour). The ricotta topping is a treat laden with Parmesan, and there are plenty of flavours coming through from the lentils and aubergine mixture. Laura Fyfe’s recipe for Jamie magazine also contains cheese (stilton this time), but the base is roast butternut squash mixed with breadcrumbs and chopped walnuts, which makes it much more adaptable – you could easily leave out the cheese, or replace it with a plant-based substitute without changing the flavour profile too much. Cook the brown rice, once cooked place rice into a salad bowl, fluff it up with a fork and pour the dressing over (start with 3 tablespoons then add more to taste) while it's still hot.

Suggested quantities make a lot of spice rub - probably more than needed but the coriander seeds, black pepper and garlic are a nice non-overpowering addition to the caramelised carrots. Make up the dressing by whisking all the ingredients together in a bowl, then pour into a serving jug. It’s a clever idea, especially because chestnut puree is now fairly easy to come by in large supermarkets, but for me it needs more than onion, garlic and seasoning to compete with sausage meat. At last - what every vegetarian has been waiting for: a vegetarian cookbook from Queen of Cooks, Delia Smith. With over 250 dishes, Delia's Vegetarian Collection illustrates how versatile vegetarian food can be and offers the reader the ultimate collection of recipes.Food styling: Loic Parisot View image in fullscreen Festive bites: Felicity Cloake’s perfect vegetarian sausage rolls. Initially I wasn't overwhelmed - I find it a bit naff to find recipes clearly written for imperial measures and then converted into odd metric. I assume I don’t have to mention to take the rolls out of the bin bag and remove the cling film first. Delia's books have always included large numbers of vegetarian recipes but now, in response to her millions of followers, Delia has selected her best vegetarian recipes to put into one collection. Divide the mixture into two balls and roll each ball out into a long sausage shape about 1 1/2 – 2cm in diameter.
