Few Irish whiskeys are more beloved and iconic than Redbreast. Through the tumultuous 20th century, the brand was able to endure the many ups and downs of the industry, all while maintaining the traditional production practices that make Irish whiskey unique. To help better understand this quintessential Irish whiskey’s place in history, here are seven things you need to know about Redbreast. Redbreast has been around for over a century. In recent years, the distiller has released other Redbreast whiskeys, including the Redbreast Cask Strength, Redbreast 21, and other limited edition releases.

I love the flavor of this whiskey almost as much as the aroma. Here's a case in point. From Irish Distillers Ltd, Redbreast is a 'Single' unblended, pure pot still Irish whiskey made with malted and unmalted barley which has been triple distilled. Our tasting found powerful, sensuous aromatics, at first reminiscent of creaming soda then vanilla wafer and sweet cereals enter giving this a Bourbon slant. The entry is soft and light. Mid palate turns deliciously creamy with semi-sweet, toasty cereals and brandy cream sauce flavours superbly counterpointed by spicy, drying oak. Finishes crisp and dry with terrific length as the vanilla wafer biscuit again emerges followed by a late creme-caramel fade. An Irish with soul and distinctive style, this also offers a mouthfeel that’s uncommon. Its lightness of body combined with depth of flavour make for a terrific aperitif.40% Alc./Vol.

From there, the mixture is pumped into a copper pot still where it is distilled three times. Then the newly made whiskey is placed into a combination of American bourbon barrels and previously used sherry casks to mature for a period of at least 12 years.Redbreast is distilled at the Midleton Distillery using copper pot stills and aged in Oloroso sherry casks. Home to several other single pot still Irish whiskeys, Midleton Distillery also produces Jameson and Tullamore Dew. Compared to either of those whiskeys, Redbreast 12 year is smoother but also more complex. Its sweetness is subtler, though still present. Its finish is smoother and lingers longer. The label itself is downright boring. A faux aged piece of paper with a red breasted bird on the front, and a bunch of brand information in far too large a font.

Probably the softest Redbreast delivery of all time... a Cadbury's chocolate and fruit and nut finale with grain being surprisingly reticent; lots of toffee and vanilla late on. One of the most docile and pacific Redbreasts I've encountered in the last 30-odd years. Lovely, though. Yum I love Redbreast 12, but that’s also because I love Single Pot Still Irish whiskey. The warm coppery malty flavor and aroma does something for me, it hits me just right. If you’re a fan of Irish whiskey, or just whiskey in general, do yourself a favor and at least try this at some point. I think you’ll be happy that you did.
