There’s nothing to be disappointed about when it comes to Millionaire’s shortbread. This is a recipe I’ve been wanting to try my hand at for a while now and after a lot of running around in the kitchen I’m very happy to share it with you. Vanilla - Try to find a high-quality vanilla extract or vanilla bean paste. Avoid using vanilla essence if you can. Once you take it out of the fridge, give it another 5 minutes to take on a normal temperature. Trust me, the perfect slice is worth the wait. To release the cheesecake from the base of your tin, run a sharp knife around the bottom edge of the cheesecake and ease it off the tin.

I thought it would be fun to turn this classic Scottish treat into a cheesecake! The Millionaire's cheesecake consists of that same shortbread base, then a layer of creamy, no-bake cheesecake, a gooey caramel layer and is topped with chocolate ganache. The chocolate ganache made more sense than a set chocolate as it will be easier to cut through without smooshing the other ingredients. Preheat your oven to 160°C/140°C fan/Gas 3. Line an 8-inch square brownie tin with baking paper and grease the sides. As we all know, a classic Millionaire's shortbread will have a shortbread base, followed by a caramel layer and then topped off with chocolate. I've added a cheesecake layer to turn this into...you guessed it - Millionaire's Cheesecake! But after explaining for the fourth time to my fourth sibling what Millionaire’s shortbread even is (“It’s like a fancy, homemade, gourmet twix bar”) not a single one seemed the least bit disappointed when they took their first bite. My mother often baked these and we called them Candy Bars. It took me quite some time to realise that the thing people were calling Millionaires Shortbread - and hailed as a new thing - was something we had enjoyed forever by a different name. So, as even my children know about Millionaires Shortbread and not Candy Bars, I have given in and changed the name. Beat the remaining cream and cream cheese together and then systematically add the gelatinous caramel mixture to it while stirring.To make the topping, melt the white chocolate in a bowl. You can either use the microwave to heat the chocolate in short bursts, being sure to stir in between. Or you can add an inch or two of water to a saucepan on a low heat, then place your chocolate in a heatproof bowl on top (not touching the water), stirring continuously to gently melt. Ordinarily, when you have such a rich cheesecake, you need something to cut through the intense flavours. As such, I recommend pairing this Millionaire's cheesecake with a glass of brandy or cognac. Otherwise, a small glass of dessert/ice wine works as well. Remove cheesecake from the pan. If you are using a springform pan this will involve releasing the sides. For a loose-bottomed pan, it will mean pushing the base up through the top of the pan. Be very gentle so you don't damage the cheesecake.
